255/275 tire combo
I think a lot will depend upon the wheel width, wheel backspacing, and vehicle ride height.
On my 70 Supreme with 255-60-15s on front, the tire would rub the fender lip on turns. I have read that some folks had similar issues, and then other folks had no issues. I swapped to 245-60s and no rubbing issues.
The 275-60s on back should be fine with the correct wheel backspacing as the rear fender wells are huge.

you could also run 245's all around and put 1" spacers on your rear hubs to push the rear tires out a bit more. You'll benefit from still being to rotate all 4 tires around and won't have to worry about what to do for spare tire...
