Oil type and quantity

I have a 1969 cutlass S with a 350 rocket, I'm wondering what kind of oil to put in it? Do I need additives? And how much oil?

5 quarts of oil.
Many here like the Valvoline VR1 line of oil as it has the correct additive package for our older engines.

Welcome aboard, Monkeyman. For additional oil info, Search here on CO. There are a number of threads comparing the different brands and their recipes. You definitely want high zinc content, per the general consensus. I just caught an Amazon sale on (3) 5Quart jugs of the Valvoline VR1 that Fun71 mentioned.

You didn't ask but use a quality filter, Wix, Baldwin, Mobil1. 5 quarts included replacing the filter.

Have fun and drive on...!!!

I only use Lucas hot rod and classic in flat tappet builds. It has 2100ppm zinc content.

Valvoline VR1 has 1400

Use the appropriate viscosity for the temperatures in which the engine will operate. Check your manuals.

Brad Penn PennGrade-1 Racing oil "the Green Oil" (originally Kendall Oil) also has high ZDDP (zinc) levels. They provide a minimum of 1500 ppm zinc in all PennGrade 1 oils

Contacted Shell last week, they advised Rotella T4, T5 and T6 (except for T6 Multi-Vehicle 5W-30) have approximately 1200 PPM ZDDP.

Put me down for Lucas as well, along with a Napa Gold oil filter.

And don't fall victim to the "heavier is better" theory of oil -- 10W-30 or 10W-40 should be plenty, depending on the ambient temperature and conditions where and when you drive. Unless you live near the equator 20W-50 is probably not necessary.
