Although it wasn't explained in detail in the video, I'm thinking the ethanol mixes with the water removing it from the gasoline so the water left has ethanol mixed in? right?

Ethanol mixes with gasoline to form a solution.
Water will not mix with gasoline.
Ethanol mixes much better with water than with gasoline. So, when you give the ethanol a choice, it will choose to go to the water layer.
The more water you use, the more ethanol is removed.
It's necessary to use enough water to attract most of the ethanol. The presenter said he used a bit more water than necessary; that removed a tiny bit more ethanol.
It was well that he let the mixture sit overnight, because otherwise any residual water in the gas layer could settle out later. That helps the StaBil prevent future settling.

1. Every one of the items he mentions (lawn mowers, weed-wackers, snowblowers, outboard motors, whatever) that run on gasoline were all DESIGNED to run on gasoline containing 10% ethanol. That's been the case for decades. You are gaining NOTHING by going through his alchemy. The devices will run just the same, and they aren't harmed by using 10% ethanol gas. He talks about some of his equipment sitting over the winter. In that case, drain the tank instead of leaving gasoline, ethanol-free or not, in it all winter long.
2. You certainly would not follow his procedure to make gasoline for your vintage car, which is something that you might actually legitimately want to run on pure gasoline, because his system works for small batches (a few gallons), not the tens of gallons needed to fill an auto fuel tank every time it needs a fill-up.
This is a guy with too much time on his hands. I have a better idea. Get a haircut.

We still have non ethanol 91 Premium gas here. I run it in my Olds. Nothing wrong with 10% ethanol fuel, IF it doesn't sit for long periods. Problem is here, things can sit for 6 months, leaving green carbs and poor running. We have seen issues with old 10% ethanol 87, I delivered gas and diesel. But a customer had poor running with non ethanol in his 4 wheelers. He switched back to 10% ethanol 87 octane, problem solved. He figured they were tuned for E10 and ran too rich on non ethanol.
