While the restoration continues

While I'm working on the bodywork I was wondering if it would be alright to fill the engine with oil and every so often prime the engine while in the engine stand. I made a engine primer from a distributor I got out of a cutlass 350 in a wrecking yard. I am still 1 to 2 years from being ready to put it back in. While priming would it be ok to turn the motor over with a wrench with the spark plugs out just to keep the lifters pumped up?

What would be a good oil to use while in storage and would I have to completely fill to the full mark?.....of course I'll have the oil filter on.

I would loosen all the rocker bridges and take the load off the valve springs and throw a couple of large desiccant bags on top of the intake. Tape over the exhaust ports, cap any open vacuum ports, and then stretch wrap the whole thing and leave it alone.
