Dawg, if the car currently has a warning light, you will lose it if you use the port David showed you. No biggie really since you'll have the gauge.
There may be another port in the same general area that you can use. By then they had warning light/gage sender port, vacuum switch port (usually on right side of engine) and some cars had another temperature switch port for emissions-related hardware (like the one with the square plug in it in David's pic).

I created my own fix for the idiot light so I could install a mechaical coolant temp gage.So if you don't mind my gibbering and saying and ahh way too much

Not the prettiest or best looking fix but it is funtional and everything works.Now I was told if I got the water neck from an 80's 307 , that will give you another port for the temp sender.So that is another option.

A gauge doesn't grab the eye the way a warning light does when you are driving. I wouldn't just get rid of it.

I generally try to keep the lights operational when I add guages. The oil pressure is easy by using a brass or stainless tee and nipple and tieing both in. With the manifold in the pic it would be easy to add the temp guage, keeping the light. My 65 does not have the extra plug in the water jacket. Thinking about a tee in the rear of manifold at heater hose fitting. Have not decided yet. For customs, race cars, etc, I like Murphy Switchguages. These have an adjustable contact to operate a warning.
When using any tees and nipples, keep nipples as short as possible or they will break with vibration.
