I bought some new roters they have the races already in them, I also bought bearings that came with races.
My question is, would it be fine to keep the ones that are already installed in the roter or should I pop them out and use the ones that the bearings came with?

Bearings are made to the ten-thousands clearance and are very consistent. After they wear in, it is best to keep a race with its bearing. In this case with new stuff, it is fine to use the ones already in the hubs (assuming they are good quality parts).
I would tend to agree with Eric on this one, only because you didn't say where the rotors were made , there could be a difference and to be safe I personally would use the races that came with the bearings as well , changing them is all of five minutes work . Just mho
