They all looked O.K. to me and I was wondering if a seasoned head was preferable like a seasoned block ...

Seasoned anything is worse than new or well taken care of lol.
I have a seasoned pair of Ga heads that were ported by mother nature herself. it took her 10 years to finish.

Back when he was a drag racer, Bob Glidden used to take brand new blocks from Ford and bury them for a year to season them. Of course, he had to completely remachine the block when it was dug up, but all residual stresses in the block were relieved. Now, the reality is that any block or head that's actually been on a running engine has been stress relieved through the heat/cool cycles that it sees when running, so "natural" seasoning is not required. The problem with starting with rusty parts is that you need to spend more to remachince every surface. This may or may not be cost effective, but consider surfaces like the valve cover gasket surface, or the accessory mounting threads.
