Convertible hood without motor close?

Yes you can. Get a friend to help you (you can do it by yourself, but it's a lot easier with two). Stand in the back seat, grab ahold of the front of the top, and very slowly pull upwards and toward you. It will move up. Keep slowly and evenly pulling it towards the front of the car.

Yes.
Disconnect the hydraulic cylinders on either side of the back seat, then you will be able to move the top by hand.
Watch out, though, it will be heavy.
When these cars were made with non-power tops, they used a large spring on each side in place of the hydraulic cylinders to help with the weight.

Eric, the hydraulic cylinders should not need to be disconnected. If you were going to manually open and close it many times then I agree, but he should be able to close it once with the cylinders connected without any issues.
