What is a safe operating temp ?

It looks like I will drive my Olds on the road for the first time since '97 when I sold the car. Obviously, I have it back again. Anyway the fan that is now on it is smaller than a factory fan...I don't know how much smaller (just smaller...inch or two). Anyway, it has the factory shroud still on it. I am just wondering my safe limit. The car is a '69 Cutlass and has a built up 350 in it (9.8:1 comp. roughly). No A/C and it has the bigger radiator in it...can't remember how many core. Thanks

I would say between 160-220*F. 195 was what the factory intended the car to run.
The TEMP light comes on between 250-260 depending on cooling system options.
