If you're doing a full restoration, or frame-off work, the Assembly Manual has the info/specs/part# you need to re-assemble the car and includes sections on suspension/spring selection, fuel/brake line routing, assembling the dash & instrument gauges, body panel/bumper gap specs, etc.
The Chassis Service Manual is for servicing/repairing the car and includes chapters on brakes, air-conditioning, wiring diagrams, transmission, engine, etc. Here's a pic of the front cover:
There is a 3rd reference you may want as well, the Fisher Body Manual which includes chapters on the windshield wipers, glass, doors & quarter trim, headliner/convertible tops, exterior body moldings, etc.
These are regularly listed for sale on eBay in book form and on computer CD-ROM. I don't recommend the CD-ROM as it can be difficult to take your computer to the garage when you're working on the car. HTH!
