496 kit advice for a new member

Hey everybody! I'm new to the forum and would like to ask a few questions about a 496 build I'm going to start piecing together.
so I've had my eye on the Eagle kit
http://www.summitracing.com/parts/esp-42105060
but I am not a fan of the -22 cc Dish pistons. I see all the parts of that kit can be purchased individually and I rather like the CP pistons with a little better -18 cc dish.
http://www.summitracing.com/parts/cnn-bo7030-060-8
The kit contains 22 cc dish mahle pistons with a 990 pin and 1.260 compression height. The CP pistons are a little better 18 cc dish with 1.250 compression height.
am I correct in asuming that the cp pistons will work but just sit .010 further down in the hole? which would result in another .010 shaved from the block to keep my ideal quench over the mahles? I will be running 77 cc chamber Heart shaped Edelbrocks. and Im looking to have about .035-.040 quench and as close to 11:1 as I can get, looking to run E85 as every gas station around me sells the damn stuff! Sorry for the long post but wanted to give all the details thanks in advance!

I think the difference is due to a decked block. CP allows for some decking of the block to be done if needed
