I don't have the skills to replace the wood grain piece so I'm trying to figure out a way to install this radio. It doesnt have to look perfect obviously. Thanks
Wow. Short of replacing the dash with an uncut one...
You need a stout backing plate to go behind the dash to hold the radio in place. You can prob find one from a 77-85 B or C body Olds. Even then it might require some mods to make it work. Also fabricate a brace to attach to back of your new radio and dash structure.
If you're lucky... VERY lucky... you'll find a front trim plate for an an aftermarket shaft mount unit that will cover the butchery on the front. My experience is few are wide enough to cover Olds mounting holes.
Ya know, I see a potential business opportunity. An insert that mounts in a hole for a DIN unit, but has a front plate with cutouts for a shaft mount radio. With the number of cars that have been chopped like that to fit a DIN radio, there might just be a market for this.

Get hard plastic by the sheet at the hardware store to fabricate a plug for the hole in the dash. Use braces on either side in the back to secure the plug to the dash. Then cover the entire section with adhesive wood grain vinyl.
Finally you can install the radio under the dash without the butchery. Good luck.
Well that is exactly the product I envisioned in my post above. I didn't know there was something already on the market. Thanks for posting, it's good to know this is available.
Here's the 68/69 face plate from the OPGI catalog - about $70 plus shipping. Gives you the factory front indentions and holes so you could properly run a stock or stock appearing stereo. You can see it also works for 70 -72 from my link/pics posted earlier.
