Yes, if you have a full size car, you need the full size parts not the mid-size parts, which would be for a mid-size car.
And P-S-T has a good reputation for decent replacement parts. You may want to consider a set with polyurethane bushings if you'd like less-mushy handling compared to the original.

It would fit. I don't know if the saginaw/alternate malarkey continued into 1965, but for my '64, I had to specify Saginaw tie rods.
If I were you, i'd go with Kanter over an ebay kit.
You should probably go ahead and replace everything (outer tie rods, center link, idler arm, springs, shocks, etc.) if you really want a new car feel. Hell, even the steering box and rag joint should get replaced.
On the other hand, all of this costs money, and the contents of the kit will do a darn good job themselves. Just make sure it comes with all the grease nipples and hardware for the ball joints.
