MSD Throttle Body
Has anyone used one of these before? What are the advantages and disadvantages (if any) for having one or is it better to just stick with the regular carbs like street demon/quadrajet?

There's quite a few threads. Try searching for "efi conversion" or "self learning efi".
Opinions are split. IMO it really depends on the owner's skill level and their desires. Carbs can run just as well - or often better - than self learning EFI, but require a totally different set of skills and time to get set up correctly. At least with the basic EFI it's just stab at the controller until the thing works. My buddy's conversion on a Chevelle cruises great but constantly dies just off idle. No way to fix that with the limited capabilities of these basic kits.

I'm in the same boat thinking is TBI the way to go? Not for me as long as I can keep my Holley 750 going.
Since we are talking about what amounts to an electronic carb in the one you linked from Summit- the tunability is limited.
You get what you pay for in the EFI just like anything else. Plus you will need to purchase a high pressure fuel pump kit which adds $$$
