keeping cool

I have a 79 cutlass with a 70 350 rocket in it, it runs beautiful but the temp runs between 190 and 195 I dont like that temp and thats without a thermostat I thought maybe I had a blown head gasket so I pulled the heads and checked the gaskets were fine so I put new ones on. After that tbe car still ran the same temp one of my buddies has the same motor told me to vet use to it because thats how olds motors are so I added electric fans and it still runs the same temp so he said tbe reason its running that high is because I dont have a thermostat I it and im not allowing the coolant time to get cool by not having a thermostat in the car so I was told to put a 160 degdee thermostat in the car and watch how much better is cools is this true is what I want bto know?

190 to 195 is a perfectly normal temperature. Why do you think it's bad? You can do damage to your engine over time if it runs too cool. You'll have incomplete combustion leading to both fouling of the cylinders and and carbon build-u as well as gasoline getting into the oil, as just a couple of examples. You should not run your engine without a thermostat.

190-195 is the correct temp your car should be running. Put the proper thermostat back in. All thermostat does is regulate the minimum temperature a car will operate. The max is dependent on the cooling capacity.

Does your '70 Cutlass have the original radiator from the 260 or the V6?

No it has a different radiator in a slightly bigger one 3 flute the reason I thought 190 was to High is because I also have a delta 88 with the same motor and my monte carlo both run 180 degrees maybe 185 no higher my carb seems tk be loading up when I crank it it idles fine but upon eccellaration its spitting sometimes fr okm the carb

I third the response. Nothing wrong with 190-195. That's an efficient temp for your engine to run. Cooler isnt necessarily good. If you can maintain that temp idling in traffic on a 95* day you have no worries.

Well it does rise a lil in the summer to about 200* but drops as I drive to 190,195

Put the thermostat back in X4.
It's there for a good reason, if it wasn't the bean counters at GM would have deleted it at the production stage, at least for hot weather states.

Ok im gonna put bit back next In this morning but now can someone explain to me why when I hit the gas it seems like my carb is loading up I just put new plugs in it AC delco and a new fuel filter but whenni crank it it idles good but when I start driving it misses like its load Ing up with gas it will poot from thd carb what could that be

Could be a bad coil or bad spark plug wires.
