I'm wanting to replace the stock 14 inch rims and tires with some aftermarket 18 inch tires and wheels

OK, better.

Your car has a 5 x 5" wheel bolt circle. You need wheels with near zero offset. Something in the 7" width would be best, depending on tire size. Fitment will depend on the tire size you select. The original tires (8.00x14) were about 28.25" in diameter. 245/55-18s would be about 0.3" taller and would fill the fenderwells nicely. BFGoodrich sells that size in their Radial T/A Spec line. 235/55-18 would be almost exactly the same diameter as the original tires. BFG also sells those in their Advantage T/A line.

As compared to what? Note that you might want to consider starting your own thread with your particular information instead of hijacking this one.

You didn't tell us your original tire size or even your year and model, so all I can tell you is that the 215/65-15 is only 26 inches in diameter, which is small compared to the original tires put on most 1960s Oldsmobiles from the factory.

Are you going to part out the 14" rims? If so, they're not warped and decent, I'm interested.

Funny thing about that.

225/65-14 tires are about 25.5" in diameter. The original 8.00-14 tires were just over 27.5" in diameter. That results in just about exactly a one inch difference in ride height.
