Sheet metal for the 68 seems to be very hard to find, except for fenders and quarters. See photo attached of the drivers side pillar of the rear window. What's the best way to get this fixed? Is custom sheet metal work the only way using a shrinker/stretcher?

Pinchweld rust like that is unfortunately all too common on the A-body cars. That flange is part of the full factory quarter panel. No one repros a full quarter for these cars, only the crappy partial quarters. Your only options are rust free used quarters from the desert or hand-fabricated patch panels. The back window opening is the same on all 1968-72 Cutlass Sport Coupes and Holiday Coupes, so any of those would be a donor for a patch panel, though full quarters were unique to the 1968 cars.
