I would just get the 1969 Oldsmobile Chassis Service Manual for '69, along with the Fisher Body Service Manual. They are available on disc or reproduced in manual form, just like the originals. I like the hard copy much better as I don't have to keep referring to a computer to look up different things while working on the car. Another key publication to have is the 1969 4-4-2/Cutlass assembly manual (actually called the PIM, or Product Information Manual). It contains a lot of visual detail not shown in the other two manuals.
You can find all of these things on ebay or various Oldsmobile parts businesses.

As Randy says, just get an original CSM and FBM and a reproduction AM (there are no originals).
I'm a bit confused as to what you mean by "many choices." There are really only three manuals.

^^^THIS. Keep in mind that there were no original electronic copies of the CSM or Fisher Body Manual. The CDs and repros being sold today are all scans of an original paper copy. Details ALWAYS get lost in this scanning process. Just buy an original paper copy.
