NOS means "new old stock", where the factory replacement part, in this case GM, is still new and unused, never bolted onto a car (doesn't mean show-car-ready perfect) and GM is no longer stocking them in their parts system. They may still be sitting in a dealership stock room somewhere gathering dust, or in someone's parts stash, but normally NOS is bought/sold on the secondary market. $10 parts when available may be $11 in the secondary market, or $110, it's simply a supply/demand situation to determine "market" prices.
