LOL , you sound just like me , take it all apart and then scratch my head and say " now what " ....but you seem to be mechanically inclined to get this far , so you'll get it done eventually....im gonna be doing the same thing you are doing down the road , so actually you inspired me

I might be a little late with this advice but, hopefully, you've read it a hundred times here before.....BAG, TAG and photograph or video EVERYTHING as you take it apart!!
It may take a little longer to disassemble but it will save you many times more than that when it comes time to put it back together not to mention the headache of trying to research what bolts go to what and "Was there supposed to be a washer there?" etc.
If you don't already have a chassis service manual AND an assembly manual, I highly recommend investing in them.
One positive thing is that it appears that you have plenty of room. I restored my car in a 2 car attached garage and my wife's car had to be able to go in the garage every night. Lots of extra set up and tear down but that was the deal. I have a 3 car 30X30 now. Don't have any room to work in it but that a different story......
Wear eye protection especially when using a wire wheel. Also, be sure to wear a mask or respirator when sand blasting. Silicosis is a very bad thing.
When you get to the interior, set up a video camera and film yourself taking the old covers off so you can look back at the tape when putting the new covers on to see which flap goes over which and where those hog rings go and how many to use. A lot of people are intimidated by upholstery work but, with the seat cover kits, it really isn't that hard if you pay attention and take your time. Just don't make the mistake of putting new covers over old, crushed foam. If you can't afford new foams, at least get them wet so they expand and let them dry and then build them up with layers where needed. If you put new covers over old foam, you'll have nothing but puckers and wrinkles beacuse the new covers will be "too big".

Wow Doug, Nice Job on the Chasis, Body work shouldn't be so intimidating as they make a LOT of parts for your car and they do not need to be adapted etc,
I see your progress and I look at how long mine is taking and I am ashamed LOL..... keep it up you are motivating all of us...
