What do you call the pad between the roof braces and the actual roof and how do you go about replacing it?

Try automotive roof thermal insulation &/or automotive roof sound deadener/deadening/barrier.

The big question is how hard is it to install between the roof and the braces?

I'm clueless. I installed some on a 1964 Dodge Dart ~50 years ago & a 1968 VW bug around the same time period. It wouldn't hurt if you stated the year & model of the vehicle your questions apply to.
