'75 Cutlass running warm?

'75 Cutlass running warm?

Any way to accurately test the temp of the coolant once the engine has reached operating temperature? I installed a 442 rally gauge and it is reading 210 degrees. Were these gauges accurate? It has a 190 T-Stat in it. Would a lower temp T-Stat lower the operating temp? Radiator and pump are relatively new. Upper radiator hose feels a little hot. Any suggestions?
