What kind of value loss?
If not completely returned to a "new off the line car" then not much at all if any.
It's your car right now do what YOU like! Not what you expect for a return in the future. As far as color if original paint that needs absolutely nothing and I doubt that as you say it already needs to be rebuilt. Keep it. Same goes for the interior. If not anyone after you sell it can change it back or whatever color they chose... If you plan on flipping the car then I would stay with the original color.

The car is " Palm Green " now and interior is also green. Son in law wants to change colors and I told him I think the value would drop from being original.
Also have a 1970 numbers matching GTO that is Gold with the brown interior that he wants to change.

I dont plan on ever selling my cutlass, so it's in original factory #81 Bamboo. But thats the way i like it.
I am a keep it original guy. To me, the value would drop by the cost it would take to make it correct plus $1000 for my time.
I had my W-30 repainted going from Sebring Yellow to Maditor Red in the mid 80s. I'm going to redo the car next year, it will go back to Sebring Yellow.

Paint is paint, not like you're going to resto-mod the cars. There are a couple of things I agree with that have been said.......made yourself happy, stick with year code colors. Before changing it I would check production numbers for your colors. Sometime the rare colors increases cars values. From my experience I would sure check out your paint guy too and check references. All that said, I like keeping the base color factory.
The reality is that neither OCA nor AACA deduct any points for paint and interior that are changed to another factory-available color appropriate for that year. In particular, changing from green to a more popular color will likely increase value, unless this is a stone-stock original rare car like a W-30.
I always say if you are building the car for sale then stay original. If you are building the car to enjoy, them make it what you want. Don't worry about the value. you will spend way more than you orignally planned on it anyway.
