What color?
As I recall, the hinges are a gray phosphate finish. I didn't have the $ to do that kind of finish on mine, though, so I bead-blasted them and painted them cast iron gray, which is a pretty close match.
The hinge spring is another story. Everyone I've ever seen in its natural state is so rusted I can't tell what color they were originally - I have the strong sense that they were just bare metal. What I did with mine was bead-blast them on a tool we made that keeps the spring spread out so I could blast everything. I then painted the springs a "stainless steel" color, put out by Seymour Paints.
Here are a couple of pictures of my passenger side hinge finished product.
The latch mechanism on my '69 is still in its natural state so I took a look at it. Depending upon which part of the latch mechanism you are talking about, it appears to be either GM chassis black or bare metal.
