Setting gaps on the trunk lid

Setting gaps on the trunk lid

I am getting ready to do the body work and want to know should I shim the trunk lid to the height of the back deck, and or do I need the gasket in place also. The trunk lid I got is from another car and I did have to realign the hinges to get it to fit. I had to replace the package tray and the rear deck plate.
Also what about the doors do I put the latches in and set the doors without gaskets.
