WHEN does the light come on, and when does it go off?

Is the wire connected to the sender, or is it resting on the manifold?

I agree to first check the sensor, but I'd at least hook up a temporary gauge to really see whats going on. Better still, is install a gauge inside the car. I put a small Auto Meter triple gauge pod in mine, and tee'd at the engine oil port, so the warning light still works. If the oil pressure's low, then time to pull the pan and check the pump, main and rod bearings. An undamped gauge will usually show if a rod bearing's going, as will be jumping around. Hopefully it's just a bad sensor, but best finding out now.

On and off randomly, or on and off in correlation with some other event, such as bumps in the road or engine RPM?

Here is the sender.
The one in this picture is big, for a gauge.
The one you have is much smaller and has one wire going to it.
