They were originally phosphate plated......grey/charcoal grey color provided by the phosphating.
Eastwood sells a "Zinc Phosphate" spray paint that is reasonably close looking to real phosphate. Exact duplicate??.....no....but still a fairly nice finish and look.
There are a number of places that can rephosphate your hinges. I have had a number of sets replated by a plater I use after I do the prep work.
