When I latch the roof on my 69 Cutlass, the gap on the drivers side between the roof and the header panel on the car is quite a bit vs. the passenger side. The passenger side seals much closer/tighter. The driver side latch also doesnt seem to pull the roof down as much as the passenger side. I havent been able to find any ways to adjust the latch or roof in any way to make sure the roof seals completely to the car. Would appreciate a link to a post I may have missed.

The hooks on the latches are adjustable - they are threaded and can be shortened or lengthened, but that may not be your issue.
When the top is put up fully, and before the latches are connected, is the front bow parallel to the top of the windshield? If not, one of the pistons may not be fully extending, the top frame mechanism may need to be adjusted, etc.
On my car, when the top is raised the front bow will make contact the windshield across the full length, and the latches just snug it down.

X2 on that. When you put the top up and release the switch, the top should be resting on the windshield header. The knuckles on the latches are adjustable but the latches shouldn't be pulling the header down, they should just be latching the top firmly in place.
