Parts for those are pretty easy to find if you have the right vehicle to go get them. Might I suggest one of these?

All kidding aside, I don't know for sure about the 64 starfires, but the 66 parts that are starfire specific are damn near impossible to find in good shape. I imagine that's the same for the 64's.
The parts that are common to the other models with that body won't be too difficult. i.e. engine, trans, brakes, steering, suspension, body, glass, but the trim level pieces that are starfire only will be very difficult.

Please feel free to correct me if I'm wrong, but I've been hunting for the right '66 starfire for 15+ years and there's VERY few out there.

You are correct. I had a '64 Jetstar 88 back in the '90s. Basic body and trim pieces (fenders, bumpers) interchange with the other 88s and the Starfire, but Starfire-specific trim will be very difficult to find. Engine components shouldn't be too bad as the 394 engine was used in all the full-size '64s except the Jetstar 88, which used the Cutlass's 330. The Jetstar I, though, used the 394. But those are likely even rarer than the Starfire.
