How to determine if/how much iron head has been milled?

How to determine if/how much iron head has been milled?
Is there a process in measuring and finding if iron heads have been milled and by how much? I had a member on here tell me there may possibly be a technique from Mondello that measures from the head surface to the valve cover rail? How do I find factory measurements for G heads?
