First question- I want to put the metallic sides towards the heads, is this correct thinking?

Just bought a set of Thornton JR exhaust manifolds for my 67 330, the ports are bigger than on the heads.

Second question, I have two sets of gaskets. One fits the engine heads and the other fits the larger ports on the exhaust manifolds.
Which one do you guys think I should use?

The metallic side goes towards the manifold.

Since there were no gaskets there originally I would try without them, a gasket may not be needed and is something that will fail over time. You can always drop them in later if there is a sealing issue.

The gaskets in your picture are for a big block not a small block.

I get the big block, bigger openings. I’ll use the smaller opening gaskets then,

You're welcome. Most parts places have them backwards.
