The interior in my current 98 was done by Joe Gibbs of Gibbs Trim in Jonesboro, GA. we could not find covers in the correct pattern so he made them. They look darn good. My 65 starfire had an NOS left fron seat cover I found on EBAY. the door panels for my 65 Jetstar 1 came from a place called Old Gold Auto Parts in Old Town, FL. If you are doing a Jetstar 88 or Dynamic 88 Rag Top Chevy Impala covers from Year One or Impala Bob's ar a good sub.
Check with Fusick Auto in Windsor, CT sometimes they will have a good line on interior parts. If you want original looking covers they can be made by a good trim shop. Depending on the area it may cost you about $1000 to have the front and rear seats done. Carpet can be purchased almost any place. The parts Place in Chicago, Fusick and USA Auto Parts will have it, also check the WWW.
If you need door panels/side panels Check Old Gold.
If you need a dash pad check with Just Dashes in CA (they have a good web site). Fusick even had the glove box insert for my 98. If you have a specific Item you need let me know I may have an idea where you can get it.
