Pinion Angle questions

As I start work on the rear suspension, and I read about the process etc. I am wondering if it is easiest to tear down one side, install the new CA and then move to the other side to avoid messing with the current angle. Also wondering if some one can explain why the angle can change when the CA's, which control attach to the rear end, only attach one way.
Thanks!

unless you are installing aftermarket control arms that are adjustable there is no way you can change the pinion angle.

That's what I thought but wanted to confirm. They are aftermarket but non-adjustable.
