71 Supreme Roof Flexing
About to start the body work (e. g. thin coats of polyester fille, high build filler). I'm starting with the roof. When I press down on the center of the roof it gives kind of like oil can effect. There is nothing on the bottom side yet. Is that normal or do I have bigger issues?

Factory typically glued a sheet of some type of real thin jute material on the roof undersides....dries out and is a mess to scrape off.
Anyway.....what you are experiencing is completely normal. The roofs on these cars will do that VERY EASILY if you start pressing down in towards the middle of the large panel. The jute did absolutely nothing to prevent that so don't worry about replacing it (if it's gone) for that purpose.
You can glue some new synthetic jute or a better option might be to glue in something like this product (low priced, light and reasonable shipping cost). This would put some "sound insulation" back in the panel and also help with heat possibly:
